Sift the flour into a suitable bowl. Beat the eggs, add them and mix until smooth.
Peel the carrots. Grate them into the dough with a rösti grater.
Chop the onion and parsley and add. Season the dough with celery salt.
Heat plenty of clarified butter in a non-stick frying pan. Using 2 spoons, place a small amount of dough in the hot butter, shape into small cakes and roast them gently over medium heat until golden on both sides. Place the Rösti cakes uncovered in a hot stove at 80 °C and keep warm.
