Try this delicious cake recipe:

Remove the peel from the carrots and grate finely. Separate the eggs, whip the egg whites with water until stiff, sifting in the sugar. Mix the carrots with the egg yolks, the grated hazelnuts and baking powder. Gently fold the beaten egg whites into the carrot mixture. Pour the batter on the spot into a greased cake springform pan lined with baking parchment.

Bake in the oven at medium heat (approx. 180 °C) for about 60 minutes, remove from the pan and cool.

Cover the cooled cake with couverture and decorate with marzipan carrots.

Our tip: The cake is very moist. If you want it to be a little firmer, you can add two tablespoons of cornstarch.
