Instructions:

For the carrot slices, first clean the carrots and grate finely. Separate the eggs. Beat egg whites until stiff. Cream margarine and sugar and gradually stir in egg yolks, vanilla sugar, cinnamon, lemon zest and clove powder. Mix spelt flour, hazelnuts, walnuts with baking powder and stir into the yolk mixture alternately with the beaten egg white and the carrots. Line baking pan approx. 20 x 28 cm with baking paper and pour in the dough.

Bake at 150 degrees (preheat oven) for about 1 hour. Let cake cool slightly and turn out.

Apricot carrot slices with jam, glaze with lemon glaze and decorate with sugar carrots.
