For the carrot wholemeal cake, preheat the oven to 180 degrees.

Grease the baking dish (approx. 18 x 18 cm) and line with baking paper. Mix the flour with baking powder and spices. Add almonds, dates, sugar, oil and apple juice and mix well.

Finally, fold in the carrots. Pour the batter into the pan, top with the halved dates and walnuts. Bake the cake in the oven for 1 hour and 15 minutes.

After baking, cover with aluminum foil for 30 minutes to prevent it from darkening. After 15 minutes of resting, turn out of the pan and remove the baking paper.

Glaze the surface of the cake with honey.
