Prepare: Rinse carrots, drain, separate from peel, finely dice, weigh. Clean spring onions, rinse, cut in half lengthwise, finely dice, weigh. Rinse apples, drain, quarter, stone, finely dice, weigh.

Bring ingredients to a boil in a saucepan while stirring, cook on stove for 10 minutes, stirring occasionally. Season the relish with the spices, make a quarter of it into a puree. Stirring all together, bring to a boil again, pour on the spot to the brim into prepared jars. Close with twist-off lids, turn to the other side and leave on the lid for about 5 minutes.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
