Remove the leaves from the cauliflower, rinse well and cook in a pressure cooker for 10-15 minutes, depending on the size.

Meanwhile, finely chop the onion, garlic and ginger. Sauté onion in olive oil until translucent. Briefly sauté garlic, ginger chili, curry and cumin and remove from heat.

Stir in silken tofu and puree with a blender. Put back on the stove, season with salt and sugar and warm up, do not boil anymore.

Cut the still hot cauliflower into bite-sized pieces and mix with the curry sauce. Sprinkle the cauliflower curry with freshly chopped parsley before serving.
