For the carfioli soup with coconut milk, cut half the head of carfioli into small florets, peel the carrots and cut them into pieces. Chop the onion and garlic clove, heat in a pot of Ceres and sweat in it. Add the cauliflower florets and carrot pieces and sauté, stirring repeatedly.

Pour the vegetables with the water and simmer until the cauliflower and carrots are soft. Then puree with a blender. Add coconut milk, salt and pepper and serve the cauliflower soup after seasoning.
