For ceviche, first cut the fish fillet into pieces about 1 1/2 cm and place in a sufficiently large bowl. Peel and finely dice the onion. Peel the garlic and press it through a press.

Clean the chili peppers, slice lengthwise, rinse and cut into narrow rings. Squeeze the oranges and lemons. Rinse the coriander greens, chop the leaves finely.

Mix oil, coriander, salt, garlic, orange and lemon juice, chili pepper and onion. Pour over fish pieces and mix everything together thoroughly. Cover and refrigerate ceviche for 2 to 3 hours.
