Instructions:

Gamskitzschnitzel best beaten between a strong plastic film flat or the same height. Season with salt and pepper. Mix mustard with finely chopped herbs and coat meat with it. Mix white bread crumbs with freshly chopped thyme in a food processor. Coat cutlets in flour, briefly beaten eggs and crumbs. Fry in plenty of oil heated to about 160 °C until golden brown on both sides and drain on paper towels. Garnish with orange or lemon slices and serve.
