For the baked chanterelle goat cheese tart with fresh herbs, peel and finely chop the shallot, cut the green onion into fine rings, clean the chanterelles. Sauté the chanterelles in a little oil with the shallots, drain well and mix with the remaining ingredients. Season with salt and pepper.

Line the tart pan (24 cm) with the short pastry, pour in the chanterelle mixture and bake in the oven at 160°C for about 45 minutes.

Season the washed herbs with a little olive oil, a few squirts of lemon juice and some salt.

Portion the chanterelle goat cheese tart into small pieces and serve with some of the herb salad.
