For the cheese rubbing stel soup, knead a firm dough from flour, salt and eggs. Finally, add the cheese and knead again.

If the dough is too soft, add some more flour. Rub dough with coarse grater and let dry for about 2 hours.

Put cheese graters in boiling salted water and boil for about 10 minutes. Strain and add to hot beef broth.

Arrange the cheese grated steles soup and serve.
