For the cheese cookies, knead all ingredients with the dough hook of the mixer to a firm dough.
Form a ball, wrap in plastic wrap and chill in the refrigerator for half an hour.
Roll out dough, cut out various shapes or wheel out small squares with a pastry wheel and place on baking paper.
Preheat oven to 170 °C convection oven. Brush with egg and sprinkle with various spices and seeds.
Bake for approx. 15 minutes until the cheese cookies are lightly browned.
