* Cantenaar is a new type of cheese from the Dutch cheese specialist Coberci Kaas and is considered the pithy one with the gentle soul, because it has only 30% fat in dry matter And 25% less salt than conventional semi-hard cheeses. Its flavor is hearty and intense. It is suitable for many cheese recipes and goes exceptionally well with asparagus spears. But of course it also tastes good with or without bread – just out of hand.

Grate the cantenaar, mix the eggs, add half of the grated cheese and season with iodized salt and pepper. Peel the potatoes and cut them into sticks, cut the smoked meat into strips.

Heat some butter in a frying pan and fry a quarter of the potato sticks and the smoked meat in it. Form a quarter of the egg mixture over it and fry it.
