Instructions:

Sift the flour into a bowl. Stir in the eggs, salt and water with a wooden spoon. Stir the dough until it bubbles. Melt the butter in a frying pan.

Peel the onions and cut them into rings. Then roast in the butter until light brown, place on paper towels. Bring a large pot of salted water to a boil.

Press the spaetzle dough through a pasta press into the water (a somewhat sticky affair!). Keep stirring with a wooden spoon. If the spaetzle come to the surface of the water, they are ready.

Using a slotted spoon, transfer the first portion to a preheated bowl. Before it goes into the oven to keep warm, sprinkle some of the grated cheese on top.

Repeat again until the dough is used up.

Cut the chives into fine rings and sprinkle over the spaetzle.

Finally, add the onions on top.
