For the cheese sticks, put flour in a bowl. Crumble yeast over it and sprinkle with sugar. Add salt and butter and knead with water with the dough hook of the food processor in about 3-4 minutes to a smooth dough.
Then let the dough rise, covered, in a warm place for about 50 minutes.
Add 2/3 of the grated cheese and knead the dough again. Roll the dough into thin long sticks, place them on a floured baking sheet and let them rise for another 15 minutes.
Preheat the oven to 180 °C. Now brush the cheese sticks with a little water and sprinkle with the remaining cheese.
Bake in the preheated oven for 15-20 minutes. The cheese should be golden and the sticks should sound slightly hollow when tapped.
