Instructions:

Pit the cherries. Grind half of the cherries in a hand mixer or with the blender. Place in a wide saucepan together with the scraped vanilla pulp form. Mix Gelfix with two tablespoons of sugar and stir into the fruit mixture. Bring to a bubbling boil while stirring throughout. Once the mixture comes to a bubbling boil, fold in the remaining sugar and bubble repeatedly. Allow to bubble for one minute. Immediately remove from the kitchen stove and pour into prepared jars and seal.
