For the chicken tomato curry, first cook the whole wheat penne according to package directions. Wash the chicken breasts, pat dry and cut into bite-sized pieces.

Heat the olive oil in a frying pan. Add the finely chopped onion and sauté until translucent. Add the chicken breast pieces as well and saute over low heat until done.

Pour in the strained tomatoes and let simmer for a while. Remove from heat and season with Madras curry powder, salt and pepper and serve with the whole wheat penne.
