For the chicken breast with plums and chestnuts, fry bacon slices in a pot until crispy. Add salted chicken, fry briefly. Remove bacon and chicken and keep warm.

Bring red wine to a boil in the pot and add thyme. Add chestnuts and simmer uncovered for 20 minutes. Cut plums into wedges and add, as well as the spring onion cut into rings.
