For the chicken croquettes, slowly fry the chicken breasts in olive oil, chop and puree with the Moulinette (make a farce).
Melt the butter, lightly fry the flour in it and pour in the milk. Mix well, let simmer a little. Mix in the chicken farce and season with salt, pepper and nutmeg.
Allow to cool. Form croquettes and coat in egg & breadcrumbs. Fry out in oil.
