For the chicken drumsticks in peanut coating, place the chicken drumsticks in a bowl and marinate with 2 tablespoons of oil and the juice of one lemon, preferably overnight.

For the breading, mix flour, curry and salt and pepper in a shallow bowl. Dredge the chicken drumsticks in the flour mixture so that they are properly coated all around. Tap off any excess flour.

Preheat the oven to 220 degrees.

Now put the cilantro leaves and the peanut kernels in a food processor with 2 tablespoons of the seasoned flour and the cayenne pepper. Spread the peanut mixture on a plate.

Then whisk the eggs with the milk.

Coat the chicken drumsticks first in the remaining flour-curry mixture, then in the egg mixture, and finally in the peanut mixture to coat.

To fry, pour the remaining oil into an ovenproof dish and place the dish in the oven to heat. When the oil is hot, place the breaded drumsticks side by side in the pan without touching. Pour the hot oil over the poultry and roast in the oven on one of the top racks for 15 minutes.

Then turn and roast for another 15 minutes. Now strain the oil and put the drumsticks in the oven for another 5 minutes to get nice and crispy. Drain on paper towels.

Chicken drumsticks in peanut coating can be eaten warm or cold!
