For the chicken halloumi skewers, first put a sage leaf on each skewer, then a cheese cube, another sage leaf and a chicken cube. Do the same with the remaining skewers.

Mix olive oil, lemon juice, salt and pepper to make a dressing and brush the skewers with it. Heat a non-stick skillet over medium-high heat and sear the skewers for 2 minutes on each side, or until the meat is cooked through. Works great on the grill too!

Serve the chicken halloumi skewers with the lemon wedges.
