For the chicken liver with mint, rinse the chicken liver in cold water and carefully pat dry.

For the marinade, pluck the mint leaves from the stems and chop finely. Mix well with olive oil, lemon juice and freshly ground pepper. Add the liver pieces to the marinade and let them soak in a cool place for at least 1 hour.

Remove the chicken livers from the marinade and dust with flour. Place on a hot grill and grill until crispy brown on all sides (about 12 minutes). Remove the chicken livers with mint from the grill and salt only now.
