Instructions:

For the marinade, finely chop the garlic and ginger and mix with the remaining ingredients. Cut the meat into 2 cm wide and 10-15 cm long strips, pound until tender and let stand in the marinade for about 3 hours. For the peanut sauce, slice the scallions, saute in hot oil until soft and set aside. In a saucepan, heat coconut milk with soy sauce, lemongrass, peanut butter and peanuts over low heat until smooth. Remove seeds from chili pepper, chop finely and add. Stir in scallions and season with lime juice and salt. Pour into small sauce bowls. Lift meat out of marinade, drain and place on wooden skewers in a wave shape. Fry on both sides on the grill (or in a pan) and serve with the sauce.
