Rinse and dry the chicken outside and inside. Next, divide into 4-6 pieces and rub with salt. Caramelize the oil and sugar in a saucepan over low heat until golden brown. Add the chicken pieces, skin side down, to the saucepan and roast for 3-4 minutes.

Peel and finely dice the onions. Peel the garlic. Crush the pimento seeds in a mortar. First, add the onion cubes to the chicken and roast for a few minutes, turning. Squeeze the garlic and add it to the chicken and roast everything together for about 2 more minutes.

Add the bay leaf spice, pimento seeds, pepper, cayenne pepper, water and coconut concentrate. Sauté everything with closed lid at low temperature for about 45 min. Serve with long grain rice.
