For the chicory au gratin, wash and dry the chicory, cut in half and remove the stalk. Boil water with salt and simmer the chicory for 5 minutes, strain and drain on paper towels.

Heat olive oil with honey and fry the chicory in it for about 10 minutes, turning. Sprinkle with the cheese and gratinate under the grill for about 4 minutes until the cheese has melted.

Arrange the gratinated chicory and serve.
