Clean the chicory, peel off the leaves one by one and remove the bitter stalks. Blanch the leaves in boiling hot salted water with the juice of one lemon and a tiny bit of grated nutmeg for 5 min, then drain.

Finely dice the bacon, render in a frying pan. Peel and finely chop the onion and garlic clove and sauté in the bacon fat until golden. Add the minced meat and fry until crumbly. Season with salt and freshly ground pepper.

Preheat the oven to 200 °C. Grease a gratin dish with butter. Form chicory and mince in layers in the gratin dish, sprinkling each layer with the cheese. The last layer is chicory, sprinkled with breadcrumbs and cheese. Put butter flakes on the top. Bake the casserole in the hot oven for 20 minutes.
