Instructions:

Cut tortillas into strips about 1 cm wide. Toast the strips in oil or possibly butter in a frying pan over medium heat, stirring throughout, until crisp. Next add the chiles, salt, onions and eggs and stir quickly. Once eggs begin to set, add cheese and continue stirring until eggs are cooked.

Portion onto plates and top with red chile sauce to taste before serving.
