Pasta dishes are always a good idea!

Mix the mushrooms and duck breast with all the other ingredients for the filling, infuse for 1 hour.

Sift the flour into a suitable bowl. Gently add the water, then knead until a smooth dough is formed.

Cover and rest for half an hour.

Coarsely chop the filling in a cutter.

Roll out the dough very thinly and cut out rounds. Shape a little filling in the center of each rondelle, brush the edge of the dough with water, and fold over the filling. Press well until smooth.

Cook the dumplings in boiling salted water for about 5 minutes.

Serve with a sweet and sour plum sauce and baked broccoli roses.
