Strain cooked egg yolks, soak bread rolls in a little milk. Mix strained yolks well with raw yolks. Strain the breadcrumbs, add them and season with salt and pepper. Now add oil drop by drop, stirring firmly until the mixture binds nicely (like mayonnaise). Add a dash of vinegar, a pinch of sugar and mustard to taste. Pour in whipped cream until the sauce has the right consistency and stir in chives. Chill.
