Instructions:

For the chocolate buttermilk cake, mix flour with baking powder and cocoa and sift into a bowl. Mix in sugar and vanilla sugar, then add eggs, butter and buttermilk and mix well.

Pour the batter into a greased springform pan (26 cm), smooth it out and bake in a preheated oven at 180 degrees for about 45 minutes. Leave the cake in the mold for a short time, then remove it from the mold, let it cool completely, then cut it twice.

Cut butter and couverture into pieces, melt with the cream and powdered sugar in a saucepan over mild heat, then let cool.

When the mixture thickens, stir with a wooden spoon until it is spreadable. Spread half of the cream on two pastry sheets.

Assemble the cake and spread the remaining cream over the top and sides of the cake. Chill the chocolate buttermilk cake for two hours, decorate as desired.
