For the chocolate coconut roulade, beat 3 yolks with water, sugar and vanilla sugar until very foamy. Mix in the cocoa. Sift the flour with the baking powder and gently fold in. Finally, add the stiff snow.Spread on a greased tray finger-thick and bake at hot air 210 degrees for 15 minutes.Immediately turn out onto a clean cloth and slowly roll up with the help of the cloth. In the meantime, briefly heat the coconut flakes in the whipped cream (do not boil!). Then mix with the Bacardi Coco and let cool.When the mixture has cooled, whip with a hand mixer.

Carefully unroll the roulade again, spread with the filling and form a nice roll again.

Cover with chocolate icing. Decorate the chocolate coconut roulade with coconut flakes if desired.
