For homemade chocolate ice cream with chocolate chips, beat yolks and sugar until well fluffy (for about 5 – 6 minutes).

Heat the milk and carefully pour to the sugar-egg mixture mix well and pour back into the pot. Beat this mixture over the hot water bath until thick and fluffy.

Add the chopped chocolate and stir until the chocolate is completely dissolved. (Be careful not to let it get too hot or the eggs will start to set).

Remove the mixture from the heat and allow to cool, stirring repeatedly. Whip the cream until stiff and stir into the cooled mixture,

Finally, stir in the chocolate chips and process everything in the ice cream maker to a creamy ice cream.

Garnish the chocolate ice cream with chocolate chips as desired and serve or place in a container in the freezer.
