Break choco into pieces and chop with a large kitchen knife into evenly sized pieces. Place minced chocolate, whipping cream, and butter in a small saucepan. Allow to melt over moderate heat, stirring continuously, until the choc is completely dissolved.

Place the egg yolks and two-thirds of the sugar in a heatproof (preferably metal) baking dish. Beat in a hot, non-boiling water bath until the sugar is dissolved.

Gradually add the dissolved chocolate in a thin stream and fold in with a whisk. Add the brandy and whisk in as well.

Remove the baking bowl from the water bath. Whip the egg whites until stiff, adding the remaining sugar and a little salt.

Add snow to chocolate mixture form and gently fold in with a whisk. Then pour the chocolate mixture into a suitable bowl or dessert glasses and refrigerate for at least 5-6 hours.

Rinse pears, peel as desired, and cut lengthwise into slices about 1/2 inch thick. Remove core of each with an apple corer. Bring sugar and sparkling wine to a boil in a medium saucepan. Steam pear slices in it for approx. 5-8 min until soft. Remove, drain and spread evenly on plates. Boil steaming liquid until syrupy, then drizzle onto pear slices.

Arrange chocolate mousse in portions with pears. Garnish with lemon balm and powdered sugar, if desired.
