For the chocolate mousse with Guinness beer, melt the chocolate with the butter. This can be done very quickly in the microwave or over a water bath.

In the meantime, beat and separate the eggs. Lightly beat the egg whites and then gradually sift in the sugar and beat until stiff peaks form.

Allow the melted chocolate butter mixture to cool slightly, then quickly beat in the egg yolks. With a few strokes, fold in the beaten egg whites.

Fill the fluffy mousse au chocolat mixture into nice serving glasses and let it chill thoroughly for a few hours.

Before serving, decorate with mint or fruit of your choice.
