Instructions:

For the chocolate mousse, first prepare the sauce. To do this, bring the raspberries to the boil with the preserving sugar.

Now simmer gently for 10 minutes, stirring occasionally. If you use frozen raspberries, defrost them first (can also be done in the microwave). Pour the sauce through a sieve and let it cool down.

For the mousse, finely chop the chocolate and then melt over a water bath. Whip the cream with the vanilla sugar until stiff. Add some of the whipped cream to the chocolate and stir until smooth, then fold in the remaining cream. Pour the mousse into glasses and refrigerate. Garnish the chocolate mousse with fresh raspberries and the sauce.
