For the chocolate roulade made with wholemeal spelt flour, first separate the eggs. Beat the egg whites with the granulated sugar until stiff. Mix egg yolks and powdered sugar until foamy. Mix in melted chocolate, cinnamon and liqueur.

Alternately mix in flour and beaten egg whites. Place baking paper on a baking tray and spread the sponge mixture on it. Bake at 180 °C for approx. 10 minutes.

While still hot, spread with cherry jam and roll up. Sprinkle with sugar.
