Separate the eggs. Whip the egg whites with sugar to egg whites. Stir in the yolks. Fold in the flour, cocoa and cornstarch. Spread the dough on a baking tray covered with baking parchment. Bake at 200 °C for a quarter of an hour.

Melt the gelatine according to the instructions on the packet. Beat the yolks with the sugar until creamy. Fold in the mascarpone. Fold in the gelatine with the liqueur. Turn the sponge out onto a sugar-covered plate. Drizzle with mocha. Spread the mascarpone cream on the sponge. Roll up. Prepare chocolate glaze according to package directions. Brush the roulade with it. Place in the refrigerator and chill thoroughly.
