For all chocolate lovers:

For a souffle dish of 17 cm ø:

Break the chocolate into small pieces, form the pieces in a metal bowl and let them melt in a hot water bath. Remove the baking dish from the water bath. Add the milk and 2 tbsp. sugar to the chocolate form. Stir with the whisk of a hand mixer until the mixture is smooth and supple. Preheat the oven to 180 °C.

Separate the eggs. Whip the egg whites with the remaining sugar until stiff. Stir the yolks into the chocolate mixture, then gently stir in the snow.

Grease the souffle dish and sprinkle with a little sugar. Pour in the chocolate mixture and sprinkle with powdered sugar.

Bake the souffle in the oven (bottom) for 20-25 minutes (gas: level 2). Bring to the table immediately, as it collapses easily. It goes well with whipped cream.
