For dolcetti al cioccolato, put the cooking chocolate in a saucepan with half a liter of water and melt over low heat.

Remove the saucepan from the heat when the chocolate has melted. Add the butter, put it back on the stove and stir well. When the mixture is simmering, remove the pot from the heat and quickly stir in the egg yolks.

Move the pot outdoors and stir every 15 minutes until the mixture is hard. This can take up to four hours and only works well in winter. Form small balls from the hard mixture and roll the dolcetti al cioccolato in the cocoa powder.
