For the Christmas ravioli, prepare the short pastry as described in the basic recipe.

Preheat the oven to 170 ºC hot air.

Roll out the dough on a floured work surface and cut out ravioli-like squares with a cookie cutter.

Place a dab of jam on half of the cookies and cover with a second cookie. Press down gently all around. The jam will create a nice ravioli curvature.

Arrange the cookies on a baking sheet lined with baking paper and bake for about 12 minutes.

Then sprinkle the finished Christmas ravioli with powdered sugar.
