Preheat the oven to 180 °C for the Christmas shortbread. Cream together the softened butter, sugar and grated lemon zest. Gradually beat in the eggs. Finally, quickly fold in the flour.

Line a baking tray with baking paper. Fill the dough into a piping bag with a star-shaped nozzle and pipe circles, bars, letters or dots of your choice onto the baking paper.

Bake the cookies on the middle rack in the oven for 15 to 20 minutes until golden brown. Remove and let cool on cake racks.

Coarsely chop cooking chocolate, melt in a hot water bath and coat the Christmas spritz cookies with it as you like.
