For the cider cookies, first make the shortbread. You can find the instructions here.

Preheat the oven to 180 °C and line 2 baking sheets with baking paper.

After resting, roll out the dough on a floured baking board and cut out any motifs with a round cookie cutter (always at least two).

Place on the baking sheets and bake in the oven for about 10 minutes until the cider cookies are light brown.

Immediately after baking, spread half of the cookies with jam and assemble with the other cookies.

In a bowl, mix the powdered sugar and the remaining package of vanilla sugar and roll the hot cider cookies in it.
