Either buy the roast pork already cut, otherwise baste the raw meat on the rind side with boiling hot water a few times and score it in a diamond shape with a sharp kitchen knife. Make small cuts in the center of each diamond with a meat fork or pointed boning knife and insert a clove into each. Stir 3 tbsp honey through with the coarse cayenne, salt, paprika and white pepper. Rub or brush the roast heartily with the seasoned honey. Place the roast on a wire rack.

Preheat the oven to 180 °C. Pour 1 l of water into the fat pan of the oven (a deep tray). Place the rack with the roast on top. Every 15 minutes, baste the roast with water from the fat pan. The roast remains in the oven for 90 minutes. 15 minutes before the end of the cooking time, brush the roast again with honey seasoning, but do not baste it.

Rest the roast for a few minutes before slicing.
