For the clover patties, soak the clover in water overnight. The next day, boil in the soaking water until soft and strain. Mix with red wine, and 1/3 of the sugar and add some cinnamon.

Cover a baking tray with baking paper and put the dough on it, spread the pear puree on it.

Squeeze the milk roll (brioche) soaked in a little milk and mix with egg yolk, some more cinnamon and the remaining sugar, add milk and cream and mix.

Beat the egg whites until stiff and fold them in. Spread this mixture over the pears and bake the Kletzenfladen in a preheated oven at 180° C for about 40 minutes.
