Instructions:

Boil the pork belly in salted water for 1 1/2 hours and let it cool down. Then turn it through the medium meat grinder, the liver through the fine one.

Dice the onions and sauté in lard until soft. Then add the liver, meat, spices and a quarter of a liter of the pork belly broth and stir heartily. Immediately pour into prepared jars (fill only a third of the jar!) and cook for 2 hours at 98 degrees.

You can experiment with this recipe without restraint: add more or less herbs, diced ham, garlic and whatever else you can think of. You can also add white truffles.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
