For the cocoa cake, place the sour cherries in a sieve and drain, reserving the juice. Preheat oven to 180 °C top and bottom heat.

Lightly moisten a baking tray and line with baking paper. Beat eggs with sugar until fluffy. Add the butter, continue mixing and slowly pour in the warm coffee.

Mix flour, cocoa, vanilla sugar, baking soda and salt and add to the mixture in batches. If the dough becomes too firm, you can add a little sour cherry juice.

Finally, mix in the lemon juice and spread the dough evenly on the baking sheet. Sprinkle the sour cherries on top and bake for 25-30 minutes.

If you like, sprinkle some powdered sugar on the cake before serving.
