Cod with Apples

Instructions:

Slightly defrost frozen cod, cut into slices at the beginning and then into coarse cubes.

Bring apple cider to boil with 1/2 tbsp ginger, the crushed peppercorns and 1/2 tsp salt, simmer gently for 5 min, pass through strainer. Add celery slices, gently bubble for 5 min, add apple segments, gently bubble for about 5 min (apple segments should not fall apart !).

Remove celery slices and apple segments, keep warm.

Add the slightly thawed cod cubes and simmer for about 5 minutes, remove and keep warm.

Pour 1.5 dl soup through a sieve, add 1.5 dl cream and let it boil. Knead butter and flour very well with a fork, add to the soup while stirring with a whisk and simmer gently for about 2 min.

Season with salt, ground pepper, 1 pinch cayenne pepper and 1/2 tbsp ginger.

Add celery slices, apple segments and diced cod and gently reheat.

And eat up!

Serve with: wild rice goes well **
