Instructions:

Cut the carrots into sticks with a sharp knife.

Heat the oil in a preheated wok and sauté the onion, carrots and peppers for 5 minutes.

Cut the cod into small cubes with a sharp knife. Remove the peel from the mango and cut the flesh right from the pit. Cut the flesh into narrow slices.

Add the cod and mango pieces to the wok form and sauté for another 4-5 min until the fish is cooked through. Make sure the fish does not fall apart.

Stir through the fruit juice, soy sauce, cornstarch and lime juice. Stir this mixture into the wok and heat until it bubbles and the juice thickens. Sprinkle the cilantro on top and bring to the table on the spot.
