Instructions:

For cod with potato scales, peel the potato and cut into very thin slices.

Pat the cod fillets dry, season lightly with sea salt and place the potato slices in a “scale look”.

Heat some olive oil in a pan and slowly fry the cod, potato scales first, until golden brown (3-5 minutes). Then flip and fry on the skin side until crispy as well.

For the herb salad, wash, dry and pluck the herbs and mix with baby spinach (or sprouts, cress…). Marinate with a little vinegar and olive oil, season with salt and pepper and serve together with the fish.

Salt the cod with potato scales a little more to taste and serve.
