Cold Cherry Soup with Curd Cheese Knoederln

Instructions:

Remove pits from cherries. Soak gelatin in cold water.

Mix cherries with preserving sugar, cinnamon stick and Prosecco and simmer for approx.

8 minutes on low heat. Remove the cinnamon stick and finely crush the cherries with a blender. Squeeze gelatine and let it melt in the warm fruit soup. Leave the soup to cool.

For the dumplings, mix quark with powdered sugar and grated lemon peel, fold in whipped cream. Leave the curd mixture to cool for 20 minutes.

Pour cherry soup into plates. Form dumplings from the curd mixture with an ice cream scoop and arrange in the cherry soup.

Garnish with mint.
